Thank You for stopping by and trying some good ole’ Southern Cooking. We opened our small Texas BBQ Joint in Cambridge, WI Memorial Day weekend of 2012. We have been given outstanding reviews and we are a 7 time Taste of Madison Winner. We smoke all our meat products (brisket, ribs, chicken, and sausage) Texas style with Hickory and Cherry wood on a 20 foot custom built BBQ pit trailer that we had built to our specification in Tyler, Texas. Our delicious sides and famous buttermilk pie are all made from scratch from our own recipes. We also have the best homemade Cajun Gumbo in the Mid-West! Since we are a small Mom and Pop business we utilize local products and labor as much as possible. We may be small, but rest assured we can accommodate your needs.

What We Do

 

We don't cook anything out of a can or a bag at our BBQ joint! All our products are made from scratch in house except the Beasley Smokehouse Sausage, Alsum's Sweet Corn, and Colonial Bakery buns. Our Cajun chicken and sausage gumbo is made from scratch including the roux and is delicious! The Cowboy Beans are made with plenty of sausage and meat with a delicious southern taste. This is exactly what the folks back home made to feed large families along with our cornbread made from scratch. Our coleslaw is made with our own creamy recipe and our tater salad is also made from scratch right here. Don't forget to finish your meal with a slice of our own homemade buttermilk pie. It is the best and even the crust is made from scratch. As you can see we are not your typical restaurant. They usually have a truck pulling out back with their food products ready-made but we spend hours preparing all our products, so you make the choice? Our serving sizes are plentiful and we promise you won't go away hungry.

The Beasley Sausage is imported in from our favorite local sausage maker back in Texas. All our meats are smoked to perfection on our own custom barbecue pit with a mixture of hickory and cherry wood. It is not cooked with any charcoal or gas.

We support the local folks here as well with the most awesome sweet corn we have ever tasted from Alsum's Sweet Corn in Randolph, WI., and Colonial Bakery buns from Madison, a family owned and operated bakery that still uses Grandpa's hard-roll recipe.
